Summer Corn Salad
Ingredients
- 1 1/2 cups halved cherry tomatoes
- 15 basil leaves
- 2 1/2 cups corn off the cob
- 2 1/2 tbsp olive oil
- 1/4 tsp salt
- 3 Tbsp fresh chopped chives
- 2 Tbsp minced jalapeño
- 2 1/2 Tbsp rice wine vinegar
- Pepper to taste
- Parmesan cheese for garish
Instructions
Whisk together olive oil, rice wine vinegar, and salt in a small mixing bowl. Add the corn, tomatoes, minced jalapeño, basil chiffonade, and chives. Fold until evenly dressed. Taste for seasoning. Too with freshly grated Parmesan. Enjoy!
